<p>My idea of the perfect sub sandwich is one in which the bread does not overwhelm the goodies inside. I&#8217;ve had the hardest time finding sub rolls at grocery stores, they tend to be too hard, too chewy, or too dense.</p>
<p>I finally found the perfect bread for homemade sub sandwiches &#8211; at Walmart (!) I have fallen in love with their &#8220;All Natural Wheat Sub Rolls&#8221;. Split and toasted in the oven they are heavenly.</p>
<p>How I build my Sub:</p>
<p>On the toasted roll, spread Miracle Whip on the inside top, Spicy Brown Mustard on the inside bottom.</p>
<p>Put cheese slices on the mustard side &#8211; if there is cheese on my sandwich, mustard must touch it.</p>
<p>Next come thin slices of pepperoni atop the cheese.</p>
<p>Pile on your meat (this time it&#8217;s deli ham).</p>
<p>Tomatoes are next.</p>
<p>Onions if I want &#8216;em. (Not this day&#8230;)</p>
<p>The crowning glory is the shredded lettuce, but I always toss the lettuce first with Beano&#8217;s Original Submarine Dressing, or if I don&#8217;t have any I use oil and vinegar. Today I added some coarsely chopped baby spinach as well.</p>
<p>With this party on my plate, it&#8217;s time to eat!</p>

<p>I picked up some organic baby spinach the other day, and so on this particular morning I decided to make a spinach omelete.</p>
<p>So I gave the spinach a quick chop, found some deli ham in the fridge that looked like good company for the spinach &#8211; under the knife for the ham! Further inspection of my fridge yielded some feta cheese and some shredded parmesan, so I invited each to join the party.</p>
<p>Quick saute of the ham, added the spinach to wilt slightly and then moved them out of the pan. Beat my eggs and added to skillet (into sizzling butter, of course&#8230;), introduced the ham and spinach to the almost-set omelet along with the cheeses.</p>
<p>The rest is history, a very enjoyable breakfast!</p>

<p>Since I am on my own now, and settled into my new apartment, I am having to adjust to cooking for one. It&#8217;s not easy because I love to cook, and I love to cook in batches.</p>
<p>So, I got a hankering for roasted chicken and cooked one earlier this week. Ended up with 3/4 of it left-over. Put half in the freezer for a future meal and had the rest to deal with. What to do, what to do.</p>
<p>I was going to just make a chicken salad, but when I rummaged in my spice bin I saw my Jamaican Curry spice bottle. Huh. Curry. Chicken. The basis for one of my favorite creations, one of my comfort foods! A quick waltz through my fridge yielded the onion, celery, peppers that I needed, but no applesauce (my not-so-secret-now ingredient). But lo, I found an apple! To the chopping block it goes.</p>
<p>I put some rice on to steam, concocted the curry, and in short order I have a steaming plate of fragrant goodness that inspired me to take a picture and create the &#8220;Meal of the Day&#8221; topic on this new blog.</p>
<p>Oh, by the way &#8211; a curry always needs some kind of garnish with it, whatever tickles your fancy (if you have no fancy imagination then Google currys for ideas). My favorites are on this dish: bacon bits, raisins, and though I usually use fresh orange wedges, mandarin oranges from a jar did the trick.</p>
<p>It was so good that I had some for breakfast the next morning. Then my daughter came over, raiding my fridge (as she always does). When she saw the last bit she shouted with happy delight &#8220;Chicken Curry!&#8221; and spirited the rest away. Therein lies the soul.</p>

<p>Now that Joomla 1.6 is stable, Stone Web Zone was a perfect candidate for me to start to get to know this new Joomla version. And since I also wanted to create a central WordPress blog for myself &#8211; well, what better place?</p>
<p>Stone Web Zone is my digital &#8220;calling card&#8221;, and this blog is intended to add a bit of flavor.</p>
<p>This time, it&#8217;s personal.</p>
